Chef Suzanne Barr's Winter Slaw

Ingredients:

• 1/2 head of red cabbage
• 1/2 head of green cabbage
• 1/4 red onion
• 3 heirloom carrots
• 3 whole green onions
• Small handful of Basil
• 1/3 cup walnuts
• 1/3 cup dried cranberries
• 2 tablespoons extra-virgin olive oil
• tablespoons white balsamic vingar
• tablespoons local honey
• 1 large orange
• Salt and pepper

    Instructions:

    1. Thinly slice cabbage and place in a large bowl.
    2. Finely chop onions, carrots and basil, add to bowl.
    3. Roughly chop walnuts and dried cranberries, add to bowl.
    4. Next, squeeze orange juice into the salad and then drizzle with the oil, vinegar and honey.
    5. Toss all ingredients well.
    6. Season with salt and pepper prior to serving.
    7. Enjoy!
