  • 50 — Carbon Content: 0.5% carbon offers good hardness, which results in good edge retention. The blade stays sharper, longer.
  • Cr — Chromium: Ensures high rust resistance in the finish of the blades.
  • Mo — Molybdenum: Increases toughness and reduces the likelihood of chipping.
  • V — Vanadium: Improves grain structure and durability to reduce wear.
  • 15 — Chromium Content: 15% chromium increases the resistance to oxidation and corrosion and allows the classification of ‘stainless steel'.
Use & Care + -
  • If desired, knives can be honed before each use, it only takes a few seconds and will make a huge difference to the functionality of the blade.
  • Unlike sharpening, honing doesn't remove any metal fibres. Instead, the friction caused by running your blade along the surface of a honing steel helps straighten and align metal fibres on the knife's edge that get bent during the cutting process. Wash before first use.
  • Hand-washing is recommend, however, the honing rod is dishwasher safe.
  • Although Kilne knives are designed to stay sharper longer, we still recommend you sharpen or hone them often. See FAQ for more details.

WHY THE SHARPENING STEEL?

Align your blades

Also known as a honing rod—this is not the same as a knife sharpener, but it is essential to keeping your knife blade sharp and cutting well.

Unlike sharpening, honing doesn't remove any metal fibres. Instead, the friction caused by running your blade along the surface of a honing steel helps straighten and align metal fibres on the knife's edge that get bent during the cutting process.
